I can find the youtube tutorials to get started with the basics, the cube and struts videos.
But is there something a bit more advanced that is customized for FRC, like using the zip file of KOP parts, and certainly there must be 2012 kitbot assemblies somewhere?

Just expand the training and resources link at the bottom of the page and you'll find all kinds of great materials.
Regarding the CAD KOP, we are submitting an update to the field and KOP today that will include lots of exciting updates including the standard Andy-Mark chassis assemblies.
If you're looking for more tips-n-tricks or getting started videos, check out http://learningexchange.ptc.com. There are a lot of great, short training videos on this site.
