After following all the instructions listed on the FRC Bridge Configuration Utility I keep getting the same following error:
Bridge Programming Failed: Failed to change IP Address
Please ensure the bridge is connected to this computer and try again
I have even tried changing my Local Connection Adapter IP Address to 10.2.80.255 with no luck with that either. What am I doing wrong?

It's protesting that it cannot change the IP address of the computer you are running the Utility on.
Possibly you have other network connections Enabled?
Go to your Network adaptor settings and make sure all but the one Ethernet port you are using, are Disabled.
By the way, after the utility is done it may leave your computer's Ethernet IP set to 192.168.0.51 and you may need to change it back to DHCP or whatever you normally have it set to.

I tried disabling the other network connections but to no avail. Is there any other information I could be leaving out that would help?

You could try setting the Ethernet IP to 192.168.0.51 yourself. In case the utility checks before bothering to change it.

I just tried that and again it didn't work, should I try resetting my computer or reinstalling the Config Utility?
Reset the radio, put the radio in AP mode and see if you can access it on http://192.168.0.50 by connecting a laptop into one of its Ethernet ports
