How do you guys monitor the bandwidth you're using?

There is a tool that comes with the driver station packages that you can download from usfirst.org under technical resources that reads the logs from all of your driver station runs. If you open up the log for a specific run-time, you can view bandwidth, dropped packets, time spent in each game segment, etc
