Will it count as crossing a defense, therefore weakening it, from the opposing courtyard. For example, going from the neutral zone, through the low bar, and back through the drawbridge from the courtyard? Would both of those count, or would only the low bar count? This may make it easier to get through both the drawbridge and the sally port.

Read the rules. I don't know the specific rule off the top of my head, but short answer: no.

Only the low bar will count. You must start a cross in the neutral zone for it to count

A DEFENSE is CROSSED by a ROBOT when that ROBOT
■ starts free of contact with the DEFENSE and completely in the NEUTRAL ZONE
■ traverses the DEFENSE such that its BUMPERS go fully between the adjacent SHIELDS/GUARDRAIL, and
■ ends up fully contained by the opponent’s COURTYARD.
