I have no answer, just a question. What is the difference between the two? Or are they the same item just called different things, like soda, cola, and pop?

They are two different types of fish. Anchovies are most commonly used as a topping on pizza. Sardines are sold canned along side tuna in the supermarket. I have never seen anchovies sold canned in the store but that doesn't mean that they aren't.
