Our "Poof" ball is 6.825 inches in diameter and weights 0.400 lbs. :)

These balls even right off of the manufacturing line won't be the same

One of our POOF balls weighed 180g and another was 183g

NO. They are different. The soccer ball is larger.

We calipered it. It's 6.75 inches.

I measured 6.9 inches on one ball that we have and 185 grams.

We measured three balls as follows:
180g
181g
183g
The scale is only good +/- 1g though.
(That's about 6.3 oz. (180g) for the metrically challenged.
For diameter, we measured just a hair under 6.875 for all three, they are very consistent.

There is a thickening, a heavy 'lump' in the middle of the black side (well, it's black on our three plus another one I saw) that is heavy enough to cause the ball to always stop with that spot down.

The skin is very thin - how do you describe it? - much like the thin skin of most any molded foam ball you have even seen. It is not open-pored like the surface of a cut piece of foam rubber.

I weighed one that was 185.327g. Why could our school possibly need a scale that measures milligrams? I have no idea.

OK, now that we got the rest of our order, we measured a total of 20 balls.
Average weight is 183.5 grams
Standard deviation is 2.55 grams

We unscientifically noted that balls also have different levels of hardness, and it doesn't correlate to weight. For example, our 187 g ball is a lot softer than a random 183g ball (as measured by pushing on the face opposite the hard spot).

With that being said, I don't think 3 grams in either direction will matter much.
