It's not a Premiere issue; it's a simple setting in QuickTime player. I went into "Edit", "Preferences" and checked "Use high quality video setting when available." Now the Premiere-generated .MOVs look very sharp!

Yeah, the Quicktime settings are the only thing wrong with Premiere's .movs. I learned that one right after we finished last year's animation and had the same problem. We did something similar to BuddyB (exported uncompressed out of Premiere and used a separate program to convert it to .mov). It was really soon after that that I learned about the Quicktime settings, and I promptly smacked myself in the face.
