I laughed so hard, I almost fell off my Segway.
(But it is not a bad idea.)
And maybe the restaurant's Dim Sum Servers can also use Segways too.

I hope they're not planning on doing any chases on them.
I don't think they've designed tricked out Segways that can go up to 100 mph.
At least not yet.

I wonder if these are the new models, where you don't need to twist the handles to turn but just need to lean inthe direction of travel?

Yes, they are. If you are going slowly enough, you don't even need to use the handlebars to turn.

FTC possibly...I don't think that a FRC team would be possible at SSIS, unfortunately. (That's during the breaks, new years and moon festival where 90% of the kids go back to their country...) Unless you want to come over here and start the team up! Plenty of sponsors/resources/mentors.. :P

You are correct.
Lean-steer is great- you don't really need hands (but it's a good idea to keep them there when you can just to be safe!)
