When you're done configuring it, you will be running in Access Point mode. The passphrase in the instructions is for Bridge Mode, which you won't be using until you configure the DAP at a competition event. I think the passphrase shown is just an example, and the actual passphrase will be set for you by the configuration kiosk software.

Will you be using the Classmate to do your software development? If so, no problem. Otherwise, either connect your development computer to the "1156" wireless network or plug it into the router directly.

It is possible, indeed likely, that you only fried the power adapter, and the DAP is still perfectly okay. If that is the case, you should be able to power it from the robot as intended.

Alright, so we can't get past the step where you change your settings in bridge mode. I know your post is pretty straight-forward, but I just wanted to double check that we in fact do not need bridge mode? Because when we try to change the settings in IE, it saves the settings for Wireless, but not for Network.
Tl;dr: We can just get away without setting up bridge mode?

You won't be using your DAP as a bridge until you go to a competition event. If things go as I expect them to, there will be an automated "FRC Radio Kiosk" that will set up everything for you.

How do you know it isn't saving the settings? If it's just a matter of failing to show you a confirmation screen, that's easy to explain -- you've just changed the DAP's address, but your computer is still trying to connect to the original address.

You don't need to set up bridge mode for development at home. You won't be using it that way (unless you do some fancy undocumented networking setup using other equipment that might work okay but is neither supported nor sanctioned this year).
