You're kidding, right? Either that, or your mentors are. Java wasn't even an option until the 2010 FRC season.

Since there has only been one year of Java possible, I think "that's how it has always been done" is a very weak statement. However, if I were you, I'd respect the mentors' decision and program the robot the way they want you to.

I would also consider "going behind their back" with a separate programming project using LabVIEW, just to show how capable you are, but I wouldn't sabotage the Java effort.
