I didn't realize this until I was well into my thirties. In fact, head cheese bears little resemblance to actual cheese. It's this really gross substance made of gelatin and pork bits that I had always assumed were thrown out. I'm secretly hoping that we see some negative points 'cause I've never seen anyone pelted with chunks of head cheese (and lived to tell of it, anyway)
