Here's a list of my favorites. I've tried to include mechanisms with pictures/videos you should be able to find by searching CD/youtube/blue alliance.

2014
118's Spring Puncher pullback/launcher
118's Shooter rotation lock/preset thing

2013
1334's Climber- didn't have to wait for hooks to reach up to grab the bar
254's Climber and gearbox- ridiculously compact/light
118's Climber - didn't work so well in practice, but a really cool idea

2012
Bridge "stingers" to help balance
16's catapult

2011
233's typical chain driven telescoping arm
148's four-bar linkage

2010
67's robot lift - lifted using only stored energy after end of match
254/33/148/1114's lift - curl up
148's shooter with cam
359's (??) pneumatic wheel climber (kind of like 118 2013)
469's entire robot

2008
1114's puncher/winch and arm. Their whole robot was amazing that year
148's swerve
118's linked swerve with rotating turret (like their 2007/2005 robots)
