We've been using the static IP for everything approach and have had no troubles with it at all, after having performed the initial setup to get the roborio, axis camera, bridge, router, and driver station on static IP addresses.
My personal feeling is that although the static IP addresses take a little more effort to get set up initially, they will continue to "just work" after the initial setup.
