I guess it depends on your definition of "sensitive". I believe that the first two definitions, listed on dictionary.com for the word, cover the two different things we are thinking about:

1. Capable of perceiving with a sense or senses.
2. Responsive to external conditions or stimulation.
Less nerve endings would result in less capability to percieve sensation, while calloused skin would be less responsive to external stimuli.
