I usually use metapad (google for 'metapad'). It handles Linux files with ease. No syntax highlighting, but after getting use to not having it, it's really distracting to use something like UltraPad...
If I'm on Linux (which isn't exactly a rare occurance...) then I usually use nano. It's quick, easy, and lacks any sort of complicated command structure. I like vi, but I'm WAYYYY to lazy to learn anything past the open and save commands.
