I can't speak for the other nukes, but with the latest templating schemes (Xanthia-included in the package, AutoTheme-a 3rd party addon), it is very easy to create almost any design. My team's site currently has a standard 3 column (*nuke) look to it just because I think it really is a good design and it hasn't become the standard for no reason.

Mambo is not the most oriented towards user contributions, its much less a community site and more a true CMS. Again, I definitley suggest you try more of them out.
