Those demo boxes were running a special version of Windows NT for the PPC. These version of Windows NT was shortly discontinued right after NT was announced around 10 years ago. Since its such an old operating system, it probably doesn't take advantage of a lot of the G5's features.

I also believe that the graphics cards are not even being used in these demos (except to draw the image). The video cards in Macs are built only for OpenGL, and not DIRECT X. The DIRECT X then must have been done by the CPUs

But of course nothing runs as well as on the real thing
