There's actually no grease to speak of in a White Castle burger. What some people derisively call their "slimy" quality comes from their being cooked with
steam (and lots and lots of well-chopped onion).
Trivia: White Castle hamburgers' size and shape are the result of much experimentation to find a burger that can be cooked properly without having to be flipped.
