It depends on the application, but when you say "most of the bolts we use" it leads me to believe they are found in many applications, and are way overkill for lots of things. Getting some different bolts I think is a good idea.

Woops, sorry, it was 3/8, not 5/8, that was for something different that I can't think of right now.
