Personally, I think that invisible multiple servers (IE, requests get sent to a non-busy server, but the user has no idea that's happening) is the best bet. Bittorrent isn't supported by many of the popular podcatchers. (IE, iPodder and bashPodder)

So far we have a bunch of volunteers, but we probably should only have 3-5ish hosts. Since they'll probably using some form of VoIP to create the podcast, they need to have broadband connections. Those are my only suggestions.
