Something like a trashbin, but made to work well in a car. It should fit in a leg well, seal well enough to keep trash and smells in even if it gets josseled and be easy to get in and out of the car for cleaning.

There are several companies that make locking consoles and storage boxes for open jeep wranglers. You should look at their stuff.

Anyway, what about a little mini fridge built in?
