Audio editing- I'll second Audacity . One of the best open source editors around.

Audio player- XMMS is nice, essentially an open-source Winamp. For library management and an iTunes-ish interface, look at Amarok. I've been using it for the past few weeks, and it's incredible as a general music manager.

Ipod- Not sure, as I don't have one myself yet (the Nano does look mighty tempting.)

CD/DVD Burner- K3B . Relatively easy to use interface (sort of like Nero), very capable.

Video Playback- Xine, Mplayer , and Realplayer. Between Xine and Mplayer, with the proper codecs installed they can play virtually anything. Realplayer is nice to have for steaming video/audio, and yes, the Linux version is less evil than the Windows version.
