In addition to gearing, the torque output depends upon wheel diameter and coefficient of friction. We were running on 4 AM omniwheels and 2 AM kitwheels, all 6" diameter. We were heavier than y'all, I'd venture, as well.
What sort of wheels did you have and what size were they? Did you have an additional chain-based reduction after your 12:1 gearboxes?

think we probably could put more torque to the floor, as things go, but momentum ought not be underestimated and we were quite a bit slower than you.
