Analog pin output data

I have an old QuickShot GenX 500 Joystick that I want to use for experimenting with a theory I have. My problem: I can't find the documentation on the analog outputs anywhere. Is there any kind of program or anything that will tell me what pin a signal is being thrown two when you output something?
The reason I want to use this particular joystick is because A. I already had it from years ago, B. It has a "Z" Rotational axis perpendicular to the other two axis.
