You are using the pot incorrectly. Please see the OI Reference Guide on the IFi website. You do not use all three terminals of a pot. The wires you have connected cause the 5 volt supply in the OI to be placed across a very small resistance in the pot (depending on the shaft position). Solving for Ohm's law for power P=V^2 / R=5*5/10=2.5 watts or even greater. I bet you have a 1/4 watt pot. The pots in the joysticks are wired in series with the joystick input. The OI then derives a voltage from the voltage division of the pot and an internal resistor.

I'm pretty sure he's connecting the potentiometer to the RC (he mentioned 10kohms, PWM cables, RC), yielding that his topology is correct but some wires are swapped!
