Hope this helps:
We stayed at All-Star Music 3 yrs ago, Carribean 2 yrs ago, and Dixie last year.
ALLSTAR POSITIVES:
1. Great pools (shaped like guitars, pianos, etc, and are VERY LARGE)
2. Each 'hotel' has a theme (ie. in music: country, rock, etc.)
ALLSTAR NEGATIVES:
1. More of a pack 'em in attitude
2. Disney busing sends one bus to all three resorts (music, sports, movie) for each spot, so buses take longer and can be much more crowded
3. If you have a hotel at teh back of the resort (we did), it can be a long walk in the morning to get to the front gate for breakfast
4. If you are at the Country resort, there are 30-ft fiberglass pink boots that one of my friends always hit his head on in the morning - it was pretty hilarious.
Overall, both are great, but I would give a slight edge to Carribean. But any of the three resorts is an excellent choice

P.S. Didn't Disney drop the deal for ALLSTAR RESORTS last year a couple of weeks into the competition? I thought it was because they could get more money from individual families coming for Spring Break.
