You can find speed, torque, and power measurements in this excel spreadsheet: http://www.chiefdelphi.com/papers/DrJoesMotorCalc.ZIP (2.3 megs).

You can also find two presentations done on the different motors and their uses: http://www.chiefdelphi.com/papers/FIRST_MOTORS_ETC.ppt and http://www.chiefdelphi.com/papers/motor_pres.ppt

Hopefully those links give you all the information that you need to know about the kit motors.
