Yes, 3/8" is OK, as long as you buy from SPI

Susan,

Yes, you can use 3/8" steel plate. You just gotta order it from SPI.

You can also get some other sizes of steel out of the rods and bar stock that SPI provides, but the types of steel are slightly different in the various sizes.

For instance, cold rolled steel can be purchased in 3" round stock, but you can only get ground tool steel in 2" stock.
