Can you help me answer one or two of these questions?

If we're carrying a stack really high so that other robots can't reach our stack, would it be legal for them to tip us? I understand that robots can't legally tip other robots as a destructive strategy, but if they're tipping us in an attempt to dislodge our stack, is that legal?

Yes, if would be legal for other robots to intentionally bump your robot to dislodge the stack. If your robot were to tip over in consequence, it would be up to the judge's decision on if it would be considered malicious or not.
