1. The IDW drawing environment does not have a CAD > Export > CAD Format option, so it is correctly greyed out.
For drawings you are generally looking at exporting to DWF, PDF, BMP, etc. 2. Default options are often like building something to match the average person, it does not work for everyone. For my demonstrations or video captures I use Winter Night Gradient. If you get a chance to attend an Autodesk application engineer demonstratiing Inventor there are some set rules they follow, including using perspective view, ground shadows, etc.
