If you need interchangeable lens the choices are limited to the Olympus and the Nikon's. If you have not handled the Olympus, I would find one and hold it first. The body is plastic and feels cheap. I don't know how it will hold up to abuse.
Shutter lag is going to be the big problem with any digital camera. I believe they all offer a burst mode that will get you around it.
I have a Nikon F series that I bought decades ago and it really held up well. I purchased a Nikon 5700 just before Nationals and am quite pleased with it.
