The rovers do have tools to grind off the face of a rock to see what is inside, and if the scientists feel a need or desire, they will do so.

They just tested that same device back here on earth. Each time the result was the grinding tool would get chewed up and not function. It IS capable of grinding through rock, but it's not made to go through nickel-iron alloy.
