Christina,
From the Robot Rules Chapter 5, R43 "Teams may utilize one or two additional small CIM motors (part #FR801-001) in addition to those provided in the kit of parts. This means that you may use up to four, and no more, small CIM motors on the robot." You may only use the number and type motors supplied in the kit and up to two additional small CIM motors.

The robot rule book is your friend in need.

Just one thing I'd also like to have clarified. In addition to the four small CIMs we can also use the two large CIMs then seeing as 2 small and 2 large CIMs were included in the KOP?

(Sorry if I'm being redundant, I'd just like to be absolutley sure.)

Yes. At most, you would be able to use 2 MiniBike CIM motors and 4 small CIM motors (and all the other motors included in the kit).
