Video quality is pretty decent, I'd say as good as it gets with a composite output. The highest quality outputs interlaced video and, in my opinion, is only marginally better than the intermediate setting - and because of that, medium quality is what I use for all my recordings.

As for size, this week I recorded one hour and forty five minutes of a Brazil vs. Netherlands match in the '74 World Cup and the file came out slightly smaller than 1 GB.

Based on that file size I think I might just pick up one of these Pinnacle devices this weekend and experiment with it and see what it can do, too bad it doesn't take firewire input as well.
