There is always, of course, the French Foriegn Legion...
More seriously, international business or media/communications could be another option. French, alas (I do work for a French company), is probably not the most useful language, but it's not a bad one either. This would be easier if international relations and language skills were combined with either business or technical skills.

A college friend of mine worked for many years in international finance. During school she spent a year of two in France and then after graduation joined a firm in San Fransisco.
