Walnuts are goot, raisins should be banned from the earth.

I like bacon brownies.

Re: Brownie Recipes - The Great(est) Debate

I have my favorite brownie recipe. There are no raisins in it. If it tastes great, why mess with it!

Code:
6 oz bittersweet chocolate (Ghirardelli 60% cacao worked well)
1/2 C (1 stick) butter
3 eggs
1 1/2 C white sugar
1 1/2 t vanilla extract
3/4 C all-purpose flour
1 C chopped walnuts

Preheat oven to 375F. Grease 9x9 inch baking pan.
Melt chocolate and butter in microwave (or stove), stir to mix.
Beat eggs, sugar, and vanilla extract in large bowl.
Reduce mixer speed to low, beat in chocolate mixture.
Beat in flour until just combined (do not overmix), stir in chopped walnuts.
Spread batter in pan.

Bake in preheated oven until toothpick in center comes out with fudgy
crumbs (about 45-50 min in glass pan). Cool in pan.

Re: Brownie Recipes - The Great(est) Debate

This subject needs some prototyping, but most random niche dessert recipes are too sweet. Is there a particular brand of mix you like JVN?

Savory and sweet is awesome but it can't be too sweet. I'm not a big fan of maple flavor anywhere but syrup.

I hypothesize: "Brownies with Raisins and Walnuts are better than ones without."

I submit as evidence: Over 3 decades of personal experimentation.

I ask you, the supposed intellectual elite of our program to join me in this great experiment.

There seems to exist an entire contingent of people who are so blinded by brownie-dogma that they will not even entertain a new dessert paradigm. They cannot open themselves up to this potential greatness.

This runs counter to the teachings of Woodie: who asks us to open ourselves up to the "truth" that can come from science, and reject the pre-conceived and self-reinforcing teachings of our existing tribes.

Try it yourself. Discuss your findings. Further rhetoric by me isn't necessary, the results will speak for themselves.

What is your experience?

PS - I hope everyone is fighting through "the week 3 slump" - maybe some brownies (with raisins) will help everyone hit the ground running in week 4.
Blasphemy !!!

Raisons must never go anywhere near brownies (walnuts are fine )

... oh, and I like Pineapple on my pizza

Re: Brownie Recipes - The Great(est) Debate

My take on the debate is simple, I think it is moot. If I have a spare raisin sitting around the shop, would I allocate it to a brownie? No, I’d put it in a butter tart. I have nothing against them in brownies, I just think they’re better elsewhere.

If you want to discuss brownies, amidst passion and conflict, I suggest: Brownies, plain or with icing?

Re: Brownie Recipes - The Great(est) Debate

John and I have debated this subject since I was a student on the team. I tend to think I have grown a lot over the years, and learned an indescribable amount of things since then. However, it appears JVN has not.

In fact, one of my favorite lessons from him is the "5 Year Rule." You can always look back on the you from 5 years before, and realize how silly you were. It appears JVN has forgotten that one as well. I had high hopes for him on this subject...

The only thing that belongs in brownies is more chocolate.

Re: Brownie Recipes - The Great(est) Debate

Bake some normal, chocolate gooey brownies until they're almost done. Take them out an put on a generous layer of marshmallows. Finish baking until the marshmallows are a nice golden brown. Top with fudge.

No raisins. No nuts. That just pollutes the otherwise pure surgery goodness of the brownie.
