I just thought it would be cool if we could score by stacking the upsidedown bins.

Yes, you can score bins upside down, sideways, right side up, no matter the orientation.

There is nothing in the manual about orientation the bins must be in to score, just the location.

Same goes with stacking the recycle bins upside down and it would probably make them more stable, but then you would either have to stuff the pool noodles in beforehand or ignore them altogether.

Pool noodles do not have to be in the recycling bin; pool noodles simply laying on top (or in this case on bottom) of the recycle bins are still scored.
