Busted RoboRio USB port - external USB hub?
It looks like we killed one of our USB ports last season when a cable came lose and ripped the camera cable in half when crossing the cheval de frise.

Would there be any issues with using an external USB hub so we can connect more than one camera?

Nothing prohibits a USB Hub. I would make sure it is a powered hub. Power the hub off a VRM (clean power).
