Mecanum Wheels
Before I embark on this project, has anybody else previously modeled a 6' mecanum andymark wheel in inventor?

No, but you can download the models off of AndyMark's site.
http://andymark.biz/am-0136.html If you are going to still attempt to model your own, I would recommend using the fan tool.
