It's probably easy to control a Vex motor using LabVIEW, but I don't know why you would want to. Before I spend a lot of time giving you possibly unusable advice, can you answer a couple of questions first?
What Vex motor do you want to control? There are multiple part numbers with different connections. What exactly do you want the Vex motor to do? You can run it at full speed in one direction or the other, or you can run it at variable speed, or you can drive its output to a specific location if you use other sensors to provide feedback. Is this for FRC? Vex parts aren't on the list of permitted motors for the 2011 FRC season.
