Ooooh, shiny! I notice you guys always make your wheels two pieces, and I've never really known why... care to enlighten me?

There's a chamfered groove in each half that acts as a beadlock style wheel and captures the tread.

In the past we've actually run the wheels with no rivets, to hold the ends down, and it works just fine

Sweet. Our wheels have the lip on the edge, but we just rivet. Does the 2 piece give any major advantages to offset the weight of cap screws to hold it together?

The weight pretty much is negligible, as far as we're concerned. The wheel weighs something like 0.23 lbs.
