Acroname robotics has been making omnis like that for years and they put them in a pair so they roll, we've been using them for years

What is the grip like on the carpet? Are the rollers made of as hard a plastic as they look, or are they similar to the KOP wheels?

the wheels are hard plastic and aren't meant to be driven, but when it comes to turning they cant be beat, just ask around on how mobile our robots have been in the last few years. With a standard 2 wheel drive system we could keep up with mechanum and crab drive, thats how tight our turns are because of those wheels

I see now, so you use them like casters, but you don't have to worry about the orientation. (Where you kick off in one direction or another due to your wheels being turned)
