Thought people might be interested in this... Over the past week, our team has adapted an encoder design we found on line and with some trial and error gotten it to work. Prototyping went great, and allowed us to fine tune all the resistances to get a pretty nice square wave (the 0V location is offset from the axis in the picture so we could get the sensitivity we wanted with the whole 5V range). They put it all into a nice package that'll fit great on our shooter. Note: The picture of the scope shows it reading about 8000 counts per minute from a fairly warped trial disc (basically a piece of paper superglued to a motor shaft), which is at least double what we need.
