I'm betting two-conductor with a white sheath. The pair of wire inside would be red and black.

You are correct sir ! we like jacketed wire because we tend to run long lengths of wire.
We like to break off electronics into modular units and sometimes the wire runs all over the place. Its probably not the best idea for resistance but modular victor plates help us test things quickly.
