We’ve always borrowed a spring scale from the physics teacher attached it to that year’s game object and dragged it along a sample of the carpet we have.

That’s a very hand-wavy parameter. It all depends on things like how much crush you’re applying, materials used for the roller, the game piece, the floor, etc., whether the game piece is being rolled or dragged, weight of the game piece, and many other things. As long as you’re over-estimating by at least some amount (but not grossly), you should get a reasonable guess as to whether your motor will work.
