Is it possible to connect Spark Max can cables to Talon SRX can cables?

CAN cables are just CAN cables. They are not manufacturer specific. Additionally, you can have them on the same CAN network. It will work just fine.

You can cut the PWMs off and use a different connector, or solder them, or add PWMs to the talons

You can also use the CAN Bus clear lever nuts from WCP, which make connecting (and reconfiguring) CAN connections very easy.
