In the videos, they mentioned that parts of switches and plates are randomly assigned to each alliance before matches. When will be able to know the side assigned to one’s alliance. Will there be enough time for a team to set the robot’s auto in a way corresponding to designated side or would it be once match starts ?

No, you find out the randomized locations after the robots are on the field and after your hands are off of your laptop. The data is transmitted through the FMS a couple seconds before auto begins so you will need some code to decide what auto to run.
